Asparagus Quiche

Ingredients (for 2ppl):

Main Ingredients:

  • 400g asparagus
  • 3 eggs
  • 20g Parmesan
  • 150g ricotta
  • 70g speck
  • 1 sheet of frozen puff pastry

Utensils:

  • Ovenproof pyrex

Instructions

Prepare (1min):

  1. Turn oven on to 180°

Cooking (35min):

  1. Steam the asparagus for (7 min)
  2. Then blanch them in cold water
  3. In a bowl, scramble the 3 eggs, then add the ricotta and parmesan, add a little salt and pepper and mix until a cream (3 mins)
  4. Lay the pastry sheet in a Pyrex container so that the sides come up, cut off any excess from the sides (2 mins)
  5. Pour in the cream, then layer the asparagus and top with the speck broken up in little strips (3 mins)
  6. Cook in the oven (20 mins)
