Asparagus Quiche
Ingredients (for 2ppl):
Main Ingredients:
- 400g asparagus
- 3 eggs
- 20g Parmesan
- 150g ricotta
- 70g speck
- 1 sheet of frozen puff pastry

Utensils:
- Ovenproof pyrex
Instructions
Prepare (1min):
- Turn oven on to 180°
Cooking (35min):
- Steam the asparagus for (7 min)
- Then blanch them in cold water
- In a bowl, scramble the 3 eggs, then add the ricotta and parmesan, add a little salt and pepper and mix until a cream (3 mins)
- Lay the pastry sheet in a Pyrex container so that the sides come up, cut off any excess from the sides (2 mins)
- Pour in the cream, then layer the asparagus and top with the speck broken up in little strips (3 mins)
- Cook in the oven (20 mins)
