Caprese

Ingredients (for 6ppl):
Main Ingredients:
- 200g white skinless almonds (can boil for 1min and remove skins)
- 150g of 70% chocolate
- 200g unsalted butter at room temp
- 4 eggs
- 180g sugar (90g x 2)
- Optional berries
Utensils:
- Baking dish 20cm round
- 2 bowls
- Saucepan and glass bowl
Instructions
Prepare (2min):
- Turn oven to 200°
- Separate yokes and white into seperate bowls
- Grease a 22cm baking tray
Cooking (1h 20mins):
- Toast almonds in 200° (10 mins)
- Let cool down fully and then blend in electric mixer (10 mins)
- Turn oven to 175°
- Melt chocolate in a glass bowl steamer (5 mins)
- In the yoke bowl add 90g sugar, all the butter, the melted chocolate and almonds and mix with electric mixer
- In the whites bowl add the other 90g of sugar and mix with electric mixer until moose
- Fold whites bowl into yokes bowl carefully to not let out air
- Pour mixture into baking tray and put in 170° oven (30 mins)
- To check if cooked, use the normal knife test
- Let it cool down and icing sugar/berries on top (30 mins)
