Chicken Skewers
Ingredients (for 2ppl):
Main Ingredients:
- 4 boneless chicken thighs
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp lemon zest
- 1 tsp paprika
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- Freshly ground black pepper
- 3 cloves of minced garlic
- 1/2 an onion
- 1 red onion
- Vegetables of your choice, pepper, courgette etc
Goes Well With:
- Couscous
- Chips
Utensils:
- Bamboo skewers
Instructions
Marinade (20mins - 8h before serving):
- Chop the 1/2 an onion, garlic, juice a lemon and get herbs ready
- Chop chicken in to 3cm cubes and put in to a medium bowl
- Add olive oil, lemon juice, lemon zest, paprika, oregano, thyme, garlic, onion, salt and pepper.
- Cover and put in the fridge (8h)
Preperation (50mins):
- Soak the bamboo skewers in water for 30 minutes
- Meanwhile, chop the red onion and vegetables in to squares
- After soaking, thread the skewers as desired and brush with extra oil
Cooking (12mins):
- Turn on the grill to 200°
- Once hot, place the skewers in for 10 minutes, turning half the way through (10 mins)
