Real Chicken Soup
Ingredients (for lots):
Main Ingredients:
- 2 packs of giblets
- 1 pack of turkey necks
- 3 x onions
- 4 x carrots
Gibblets:
15, Menachem's Glatt Kosher Ltd, Russell Parade, Golders Green Rd, London NW11 9NN
Matzah Balls (16):
- 115g Matzah Meal
- 1 egg
- 2 tbsp ground almonds
- 1/4 tsp powdered cinnamon
- 1 tbsp chicken fat
- 230ml luke warm water
- 1 tsp salt
Utensils:
- Big saucepan
Instructions
Soup (4 hours):
Needs to be made the day before
- Chop all ingredients and put into a pot
- Cover with water (till the 5l mark)
- Bring to the boil, then simmer on low for 4 hours with lid on, but open letting steam out
- Fill up to 5l mark with boiling water
- Strain, take out the bits of chicken not wanted and throw away, put the rest back in the soup
- Put in fridge overnight
- Next day skim off fat from the top and discard, ready to heat up and serve (with pasta)
Matzah Balls (20 mins + 15 mins):
Needs to be made the day before
- Beat the egg in a large mixing bowl
- Add almonds, cinnamon, fat and salt and mix together
- Add water and mix
- Gradually add Matzah meal and mix in
- Put into the fridge and cover overnight
- Take out, roll into balls, dip hands in water so it doesn’t stick
- Boil water with a little bit of salt, simmer for 15 mins and cover in fridge
- Steam for 5 mins before adding to soup
