Chicken Stew
Ingredients (for ---ppl):
Main Ingredients:
- One pack of chicken thighs (about 600g)
- 10g dried porcini mushrooms
- A splash of red wine
- A can of peeled tomatoes
- 1 onion
- 1 large carrot
- 2 pieces of celery
- 1 clove of garlic
- 1 sprig of Rosemary
- Parsley optional at the end
Goes Well With:
- Rice
- Seasonal Vegetables
Utensils:
- Le Creuset
Instructions
Prepare (10min):
- Let the porcini mushrooms soak in room temperature water
Cooking (30min):
- In the le creuset pot add some olive oil. Once hot, brown all the sides of the chicken, letting it cook for about 5 minutes - then remove
- Chop the onions, carrot and celery finely, peel the garlic and add it all to the pot
- After a minute add the rosemary and the mushrooms (squeeze the water out of them).
- Add the chicken back in, add a splash of red wine and let it all cook for 5 minutes
- Add the tin of tomatoes, cover and let it cook for 15-20 minutes (depends on how thick the thighs are).
- After this time the sauce will be still liquid, so if you want a thicker stew lift the lift halfway through cooking.
