Fishcakes

Ingredients (for 4ppl):

Main Ingredients:

  • 400g potatoes
  • 400g salmon fillet
  • 4 spring onions
  • 2 tbsp fresh parsley
  • 2 tbsp plain flour
  • 2 medium free range eggs
  • 60g breadcrumbs

Goes Well With:

  • Seasonal Vegetables

Utensils:

  • Saucepan
  • Ovenproof tray

Instructions

Prepare (2min):

  1. Peel and cube potatoes
  2. Thinly slice spring onions
  3. Chop parsley
  4. Beat the eggs in a bowl
  5. Boil kettle

Cooking (50mins):

  1. Boil potatoes (15 minutes)
  2. Meanwhile, simmer salmon in water (5 minutes)
  3. Turn oven to 200°
  4. Drain potatoes thoroughly and mash
  5. Drain salmon and break into flakes
  6. Stir potatoes, spring onions and parsley in a bowl
  7. Fold in the salmon flakes into the bowl and season
  8. Shape into 8 fishcakes
  9. Dust the cakes in flour, dip into eggs and then breadcrumbs
  10. Drizzle lightly with vegetable oil and put into the oven (20 minutes)
