Fishcakes
Ingredients (for 4ppl):
Main Ingredients:
- 400g potatoes
- 400g salmon fillet
- 4 spring onions
- 2 tbsp fresh parsley
- 2 tbsp plain flour
- 2 medium free range eggs
- 60g breadcrumbs
Goes Well With:

Utensils:
- Saucepan
- Ovenproof tray
Instructions
Prepare (2min):
- Peel and cube potatoes
- Thinly slice spring onions
- Chop parsley
- Beat the eggs in a bowl
- Boil kettle
Cooking (50mins):
- Boil potatoes (15 minutes)
- Meanwhile, simmer salmon in water (5 minutes)
- Turn oven to 200°
- Drain potatoes thoroughly and mash
- Drain salmon and break into flakes
- Stir potatoes, spring onions and parsley in a bowl
- Fold in the salmon flakes into the bowl and season
- Shape into 8 fishcakes
- Dust the cakes in flour, dip into eggs and then breadcrumbs
- Drizzle lightly with vegetable oil and put into the oven (20 minutes)
