Lamb Casserole
Ingredients (for 6ppl):
Main Ingredients:
- 1.5kg boneless shoulder or leg of lamb
- 50g flour
- 100g pancetta
- 1 large onion
- 6 medium carrots
- 4 large celery sticks
- 4 cloves of garlic
- 1 tbsp fresh rosemary
- 100ml of red wine
- 400ml pasata
- 750ml of chicken stock
- 3 bay leave
Goes Well With:
- Cardomon rice
- Seasonal Vegetables
Utensils:
- Dutch oven
Instructions
Prepare (3mins):
- Dice lamb into 3cm chunks
- Slice onion, carrots, celery sticks and chop rosemary
- Pour flour into a large mixing bowl and add lamb
Cooking (95mins):
- Fry the lamb in a little olive oil and set aside (5 mins)
- Fry the pancetta (2 mins)
- Add onion and cook (5 mins)
- Add carrots, celery and cover (5 mins)
- Uncover, add garlic and rosemary and cook (1 min)
- Pour the remaining flour into the veg, pasata, stock, wine and bay leaves and stir
- Return the lamb to the pot, part cover and simmer, stir occasionally (75 mins)
- Take out the bay leaves and serve
