Latkas
Ingredients (for 10ish Latkas):
Main Ingredients:
- 6 medium sized potatoes
- 1 onion
- 2 eggs
- 60g matzah meal
- Salt and vegetable oil for frying
Utensils:
- Frying pan
Instructions
These can be made in advance, stored in the fridge and re-heated for 20 mins in a hot oven
Prepare (15min):
- Peel onions and potatoes
- Lightly whisk the two eggs
Cooking (20min):
- Grate the onions and potatoes in a large bowl and squeeze out all the water from the potatoes
- Add in the salt, eggs and matzah meal and mix thoroughly
- Make into patty shapes and deep fry for roughly 10 minutes (5 mins each side) until outside is golden brown and crispy and insides are cooked
