Leak & Potato Soup

Ingredients (for 6ppl):

Main Ingredients:

  • 3 leeks
  • 3 celery stalks
  • 45g butter
  • 900g Yukon Potatoes (about 6)
  • 1 litre of chicken stock
  • 350ml of non dairy milk
  • 1 tsp salt
  • 1/8 tsp black pepper
  • Cooked bakon/parsley to garnish

Utensils:

  • Stockpot

Instructions

Prepare (5min):

  1. Cut the leaks in half and slice (remove green parts), then wash
  2. Slice the celery sticks
  3. Boil the kettle with 1.5 litres of water

Cooking (30mins):

  1. Melt butter in stockpot, add leeks and celery to soften, (7 minutes)
  2. Peel and cube potatoes, get the chicken stock ready
  3. Add potatoes and stock, bring to a boil and simmer (20 minutes)
  4. Add the non dairy milk and salt and stir
  5. Puree the soup, season if required
