Ministrone Soup
Ingredients (for 8ppl):
Main Ingredients:
- 1 medium yellow onion, chopped
- 2 medium carrots, peeled and chopped
- 2 medium ribs celery, chopped
- 1 leek, chopped
- 2 potatoes diced small
- 1 x zucchini
- 1/2 pack green beans
- 200g peas
- 250g spinach
- 4 cloves garlic, pressed or minced
- 1/4 teaspoon dried oregano
- 1 large can diced tomatoes, with their liquid
- 2l stock
- 1 teaspoon fine sea salt
- 2 bay leaves
- fresh thyme
- fresh parsley
- 2 teaspoons lemon juice

Instructions
Prepare (10min):
- Chop all veggies
Cooking (35min):
- Put some oil in a pan and add onions, celery, carrots, leeks and some salt and soften (8mins)
- Meanwhile, make the stock
- Add all the vegtables, garlic, oregano and thyme (2mins)
- Add diced tomatoes, stock, salt and bayleaves and black pepper, bring to the boil and partly cover (20mins)
- Stir in lemon juice and a bit of oil and season to taste
