Minestrone Soup

Ingredients (makes 10 portions):

Main Ingredients:

  • 2 medium yellow onion, chopped
  • 2 medium carrots, peeled and chopped
  • 2 medium ribs celery, chopped
  • 1 leek, chopped
  • 2 potatoes diced small
  • 1 x zucchini
  • 1/2 pack green beans
  • 200g peas
  • 250g spinach
  • 50g butter
  • 4 cloves garlic, pressed or minced
  • 1/4 teaspoon dried oregano
  • 1 large can diced tomatoes, with their liquid
  • 2l stock (2 veg stock cubes)
  • 1 teaspoon fine sea salt
  • 1 bay leaf
  • fresh thyme
  • fresh parsley
  • 2 teaspoons lemon juice

Instructions

Prepare (10min):

  1. Chop leeks, onions, carrots and celery

Cooking (35min):

  1. Put some butter in a pan and add onions, celery, carrots, leeks and some salt and soften (10mins)
  2. Meanwhile, prepare zucchini, beans, peas, potatoes and garlic and make the stock
  3. Add the remaining vegtables, garlic, oregano and a bit of salt (2mins)
  4. Add diced tomatoes, stock, salt, thyme bayleaf and black pepper, bring to the boil and partly cover (20mins)
  5. Stir in the spinach in the last 5 minutes
  6. Stir in lemon juice and a bit of oil and season to taste
