Minestrone Soup

Ingredients (makes 10 portions):
Main Ingredients:
- 2 medium yellow onion, chopped
- 2 medium carrots, peeled and chopped
- 2 medium ribs celery, chopped
- 1 leek, chopped
- 2 potatoes diced small
- 1 x zucchini
- 1/2 pack green beans
- 200g peas
- 250g spinach
- 50g butter
- 4 cloves garlic, pressed or minced
- 1/4 teaspoon dried oregano
- 1 large can diced tomatoes, with their liquid
- 2l stock (2 veg stock cubes)
- 1 teaspoon fine sea salt
- 1 bay leaf
- fresh thyme
- fresh parsley
- 2 teaspoons lemon juice

Instructions
Prepare (10min):
- Chop leeks, onions, carrots and celery
Cooking (35min):
- Put some butter in a pan and add onions, celery, carrots, leeks and some salt and soften (10mins)
- Meanwhile, prepare zucchini, beans, peas, potatoes and garlic and make the stock
- Add the remaining vegtables, garlic, oregano and a bit of salt (2mins)
- Add diced tomatoes, stock, salt, thyme bayleaf and black pepper, bring to the boil and partly cover (20mins)
- Stir in the spinach in the last 5 minutes
- Stir in lemon juice and a bit of oil and season to taste
