Mushroom Chicken
Ingredients (for 2ppl):
Main Ingredients:
- 2 x chicken breast
- 1 Pack of Chestnut Mushrooms
- 150g Buffalo Mozzerela
- 20g grated parmesan
- Golden Breadcrumbs
- A little Flour
- 1 x egg
- Chicken stock cube + 250ml of water
Goes Well With:
- Roast Potatoes
- Seasonal Vegetables
Utensils:
- Pyrex
- Frying Pan
Instructions
Prepare (4mins):
- Lightly beat egg and put in a bowl, pour some flour in another bowl and mix breadcrumbs and parmesan and spread on a small plate
- Slice all the mushrooms and use half to line the bottom of the pyrex dish
- Mix 250ml of boiling water with chicken stock cube and stir
- Preheat oven to 175°
Cooking (40min):
- Flatten chicken a bit, dip in flour, then eggs and then breadcrumbs
- Fry in a bit of oil for 1 min on each side until golden brown, take out and place on top of paper towels to absorb the oil
- Place chicken on top of mushrooms in the Pyrex, pour in stock, add the rest of the mushrooms around the chicken and slices of buffalo mozerella on top of the chicken
- Put into oven for 25 minutes
