Mushroom & Lentil Soup

Ingredients (for 1 person):

Main Ingredients:

  • 60g lentils
  • 20g mushrooms
  • Half an onion
  • Half piece of celery
  • 1 bay leaf
  • 1 small garlic
  • 4 basil leaves
  • 1/2 vegetable cube

Instructions

Cooking (30min):

  1. Chop the onion and celery, cook it in a bit of oil with the bay leaf for 3 mins.
  2. Chop the mushrooms, add to the pot, then cover and cook for 5 mins
  3. In the meanwhile, chop the garlic and basil very small
  4. Rinse the lentils and add them to the pot with 250ml water, the vegetable cube, garlic and basil
  5. Cook covered for anther 20 minutes. Serve with bread or top up the water to cook with pasta.
