Mushroom & Lentil Soup
Ingredients (for 1 person):
Main Ingredients:
- 60g lentils
- 20g mushrooms
- Half an onion
- Half piece of celery
- 1 bay leaf
- 1 small garlic
- 4 basil leaves
- 1/2 vegetable cube
Instructions
Cooking (30min):
- Chop the onion and celery, cook it in a bit of oil with the bay leaf for 3 mins.
- Chop the mushrooms, add to the pot, then cover and cook for 5 mins
- In the meanwhile, chop the garlic and basil very small
- Rinse the lentils and add them to the pot with 250ml water, the vegetable cube, garlic and basil
- Cook covered for anther 20 minutes. Serve with bread or top up the water to cook with pasta.
