Root Veggie Soup
Ingredients (for 4ppl):
Main Ingredients:
- 2 parsnips
- 4 carrots
- 600g turnips
- 8 cloves of garlic
- little bit of oil
- A tiny drizzle of maple syrup
- 1/2 a small bunch of fresh sage
- 1.5l of vegetable stock
- Grating of nutmeg
Utensils:
- Stockpot
Instructions
Prepare (10min):
- Heat the oven to 180°
- Peel and chop all vegetables
Cooking (45min):
- Toss all the veggetables with some oil, the garlic and salt and pepper and put in to the oven (30 mins)
- Drizzle a tiny bit of maple syrup and put back in the oven (10 mins)
- Brush the whole sage leaves with oil and put in for the last bit (3 mins)
- Scrap the veggies out in to a stockpot, squeeze the garlic out of their skins
- Add 1.5l of stock and blend
- Bring to the boil and season with salt, pepper and nutmeg
