Root Veggie Soup

Ingredients (for 4ppl):

Main Ingredients:

  • 2 parsnips
  • 4 carrots
  • 600g turnips
  • 8 cloves of garlic
  • little bit of oil
  • A tiny drizzle of maple syrup
  • 1/2 a small bunch of fresh sage
  • 1.5l of vegetable stock
  • Grating of nutmeg

Utensils:

  • Stockpot

Instructions

Prepare (10min):

  1. Heat the oven to 180°
  2. Peel and chop all vegetables

Cooking (45min):

  1. Toss all the veggetables with some oil, the garlic and salt and pepper and put in to the oven (30 mins)
  2. Drizzle a tiny bit of maple syrup and put back in the oven (10 mins)
  3. Brush the whole sage leaves with oil and put in for the last bit (3 mins)
  4. Scrap the veggies out in to a stockpot, squeeze the garlic out of their skins
  5. Add 1.5l of stock and blend
  6. Bring to the boil and season with salt, pepper and nutmeg
