Rosemary Chicken

Ingredients (for 2ppl):

Main Ingredients:

  • 2 x chicken breasts
  • 2 sprigs of rosemary

Goes Well With:

  • Roasted Potatoes
  • Seasonal Vegetables

Utensils:

  • Skillet

Instructions

Best if chicken is brined (45mins - 4 hour before)

Prepare (2mins):

  1. Turn oven to 200°
  2. Heat up skillet
  3. Chop up rosemary finely
  4. Take chicken out of brine and pat dry, add a drizzle of extra virgin olive oil to both sides and sprinkle the rosemary on top

Cooking (15min):

  1. Cook the chicken in the skillet (4 mins)
  2. Flip chicken and transfer to the oven (12 mins - internal temperature of 74°)
  3. Take out of the pan, drizzle with extra virgin olive oil on both sides and serve
