Seared Scallops

Ingredients (for 2ppl):

Main Ingredients:

  • 8 large bay scallops (diver scallops are ok)
  • 2 tbsp unsalter butter
  • A couple sprigs of fresh thyme
  • Salt and pepper

Utensils:

  • Frying pan

Instructions

Prepare (15min):

  1. Remove from the fridge 15 mins in advance and blot dry with paper towels

Cooking (4min):

  1. Salt and pepper both sides of the scallops
  2. Get a frying pan with a little vegetable oil smoking hot
  3. As soon as you see a bit of smoke put the scallops in around the edges of the pan for 90 seconds (don't move them during this time)
  4. Flip over the scallops when they have a golden crust and cook for a further 30 seconds
  5. Push the scallops to the back of the pan, throw in the butter and thyme and baste the scallops for a further 30 seconds
