Special Fried Rice
Ingredients (for 2ppl):
Main Ingredients:
- Pre cooked boiled rice (180g)
- Chicken/prawns/bacon
- Frozen peas
- Pak choi/broccoli
- 1/2 carrot
- Mushrooms
- Water chestnuts
- 3 spring onions
- Ginger
- 2 cloves of garlic
- 1 egg
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- A glug of seasame oil
Utensils:
- Wok
Instructions
Best if chicken is brined (45mins - 4 hour before)
Prepare (10min):
- Have some boiled rice pre cooked and cooled
- Chop all vegetables and grate the ginger
Cooking (12min):
- Heat up a pan and add some sesame oil
- Cook the chicken/prawns/bacon as required and then set aside in a bowl
- Put the spring onions, ginger and garlic in the wok and stir (30 seconds)
- Add the vegetables and stir (30 seconds)
- Add the cold boiled rice and stir (5 minutes)
- Make some space in the pan and crack the egg in it, stir with a spoon and just before it is finished cooking stir it into the rest of the rice and vegetables (2 mins)
- Add the soy sauce and rice wine vengar and stir (30 seconds)
- Add the chicken/prawns/bacon back in and stir (1 minute)
