Special Fried Rice

Ingredients (for 2ppl):

Main Ingredients:

  • Pre cooked boiled rice (180g)
  • Chicken/prawns/bacon
  • Frozen peas
  • Pak choi/broccoli
  • 1/2 carrot
  • Mushrooms
  • Water chestnuts
  • 3 spring onions
  • Ginger
  • 2 cloves of garlic
  • 1 egg
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • A glug of seasame oil

Utensils:

  • Wok

Instructions

Best if chicken is brined (45mins - 4 hour before)

Prepare (10min):

  1. Have some boiled rice pre cooked and cooled
  2. Chop all vegetables and grate the ginger

Cooking (12min):

  1. Heat up a pan and add some sesame oil
  2. Cook the chicken/prawns/bacon as required and then set aside in a bowl
  3. Put the spring onions, ginger and garlic in the wok and stir (30 seconds)
  4. Add the vegetables and stir (30 seconds)
  5. Add the cold boiled rice and stir (5 minutes)
  6. Make some space in the pan and crack the egg in it, stir with a spoon and just before it is finished cooking stir it into the rest of the rice and vegetables (2 mins)
  7. Add the soy sauce and rice wine vengar and stir (30 seconds)
  8. Add the chicken/prawns/bacon back in and stir (1 minute)
