Chicken & Spinach Burgers
Ingredients (makes 7 burgers):
Main Ingredients:
- 500g chicken mince
- 200g spinach
- 1 egg
- 20 g parmesan
- salt
- ground nutmeg
- Golden breadcrumbs
Goes Well With:
- Home-made chips
- Seasonal Vegetables
Utensils:
- Oven proof tray
- Blender
- Frying pan
Instructions
Prepare (40mins):
- Cook the spinach in a pan with a bit of olive oil, strain and squeeze out the water (5 mins)
- Put the spinach in a blender with a pinch of salt and blend (1 min)
- In a large bowl, add the blended spinach, mince chicken, one egg, all the parmesan, salt and a pinch of nutmeg, mix with your hands and slowly add some breadcrumbs, depending on how wet the dough is (1 mins)
- Add the remaining breadcrumbs in another shallow bowl, make the patties with your hands, and then drop them in the breadcrumbs (3 mins)
- Leave to rest in the fridge before cooking (30 mins)
Cooking (20-30mins):
- From chilled: Cook in a pre heated oven at 200° (20 minutes)
- From frozen: Cook in a pre heated oven at 200° (30 minutes)
