Squid Paella

Ingredients (for 2ppl):

Main Ingredients:

  • 4 frozen squid
  • A couple of broccoli florets
  • 50g peas
  • 2 cabbage leaves
  • Handful of green beans
  • 500g fish stock cube
  • Big pinch saffron
  • 160g risotto
  • 1 spring onion
  • 1 garlic
  • Handful of tomato sauce

Utensils:

  • Le Creuset

Instructions

Prepare (15min):

  1. Chop and weight all the ingredients.

Cooking (20min):

  1. In the wok, fry the spring onion, garlic and squid to start with, then add the vegetables.
  2. After a couple of minutes of softening, toast the rice
  3. Put the saffron with the fish stock, then add the stock and passata.
  4. Cover for 13 mins, then lift the lid for the remaining 5 mins and let the broth evaporate
  5. Don’t stir but don’t raise the heat too much - the rice will burn otherwise.
