Superfood Salad
Ingredients (for 2ppl):
Main Ingredients:
- 2 x salmon steaks
- 2 x uncooked beetroots
- 8 x generous handfuls of baby spinach
- 4 tbls crumbled feta
- 4 tbls pine nuts
- small pack of asparagus
- 1 x avocado
Sauce:
- 2 tbsp butter
- 2 tbsp balsamic vinegar
- 2 clove of garlic, minced
- 2 tsp Dijon mustard
- 2 tbls of olive oil
Utensils:
- Ovenproof tray
Instructions
Prepare (5min):
- Preheat oven to 220°
- Peel and slice beets, toss in oil, salt and pepper and lay on ovenproof tray with asparagus
- In a small bowl whisk all the sauce ingredients together
Cooking (25min):
- Put beetroots/asparagus tray in the oven for 20 mins
- 5 minutes before beetroots are ready sear Salmon for 2 minutes each side in a hot frying pan
- Throw all salad and half the sauce into a bowl, toss
- Add salmon, beets, pine nuts, crumbled fetta and remaining sauce
