Vegetable Paella
Ingredients (for 2ppl):
Main Ingredients:
- 160g risotto rice
- 10g paprika
- Large pinch of saffron
- 100g passata
- 100g artichoke hearts
- 80g peas
- 80g cauliflower
- 80g carrots
- 80g green beans
- 80g mushrooms
- 250g of uncooked prawns
- 1 garlic
- 600ml veggetable broth
Utensils:
- Skillet
Instructions
Prepare (8min):
- Peel/chop all the vegetables
- Make the 600ml of broth and add the safron
Cooking (23min):
- Put some olive oil in the skillet and fry the garlic and prawns till pink (2 mins)
- Take the prawns out and then add all of the vegetables in (3 mins)
- Add the pasata, paprika, saffron and rice to the skillet, stir and cover (18 mins - 10 mins high heat, 8 mins medium heat)
- Add the prawns back in 2 minutes before the end
