Vegetable Paella

Ingredients (for 2ppl):

Main Ingredients:

  • 160g risotto rice
  • 10g paprika
  • Large pinch of saffron
  • 100g passata
  • 100g artichoke hearts
  • 80g peas
  • 80g cauliflower
  • 80g carrots
  • 80g green beans
  • 80g mushrooms
  • 250g of uncooked prawns
  • 1 garlic
  • 600ml veggetable broth

Utensils:

  • Skillet

Instructions

Prepare (8min):

  1. Peel/chop all the vegetables
  2. Make the 600ml of broth and add the safron

Cooking (23min):

  1. Put some olive oil in the skillet and fry the garlic and prawns till pink (2 mins)
  2. Take the prawns out and then add all of the vegetables in (3 mins)
  3. Add the pasata, paprika, saffron and rice to the skillet, stir and cover (18 mins - 10 mins high heat, 8 mins medium heat)
  4. Add the prawns back in 2 minutes before the end
