Vegetable Stock

Ingredients:
Main Ingredients:
- 2.5l of water
- 2 medium onions
- 4 medium carrots, chopped
- 2 celery stalks
- 5 garlic cloves
- handful of fresh parsley
- small bunch of thyme
- 2 bay leaves
- 2 tsp salt + pepper
- Can include fennel fronds, leek tops, corn cobs or mushroom stems
Utensils:
- Stockpot
Instructions
Prepare (4min):
- Peel and chop all vegetables roughly
Cooking (60mins):
- Add all to a stockpot and simmer (1h)
- Strain and portion up
