Vegetable Stock

Ingredients:

Main Ingredients:

  • 2.5l of water
  • 2 medium onions
  • 4 medium carrots, chopped
  • 2 celery stalks
  • 5 garlic cloves
  • handful of fresh parsley
  • small bunch of thyme
  • 2 bay leaves
  • 2 tsp salt + pepper
  • Can include fennel fronds, leek tops, corn cobs or mushroom stems

Utensils:

  • Stockpot

Instructions

Prepare (4min):

  1. Peel and chop all vegetables roughly

Cooking (60mins):

  1. Add all to a stockpot and simmer (1h)
  2. Strain and portion up
