Venison Burgers
Ingredients (for 4 burgers - can freeze):
Burger Ingredients:
- 500g venison mince (10% fat)
- 100g of bacon rashers
- 1 onion
- Salt and pepper
- 4 brioch buns
- Grated cheddar (optional)
Caramelized onions:
- 1 onion
- 20g unsalted butter
- Pinch of sugar
- Pinch of salt
Goes Well With:
- Homemade chips
- Salad
Utensils:
- Bowl
- Skillet
- Saucepan
Instructions
Prepare (8min):
- Caramelised onions: Peel and slice the onion
- Burgers: Peel the other onion and grate, then squeeze out the liquid, add to the bowl
- Burgers: Cut up the bacon into tiny pieces, add to the bowl along with the venison mince
- Burgers: Mix thoroughly with hands and form into 4 patties - pressing a dip in the centre
Cooking (22min):
- Caramelised onions: Melt the butter in a medium heat saucepan and add the sliced onions, stir occasionally, sprinkle a pinch of sugar and salt after 10 mins (total cooking 20 mins)
- Burgers: Grate cheese if using
- Burgers: Start heating a skillet to medium high heat
- Burgers: Brush burgers with olive oil and salt and pepper just before putting in the skillet
- Burgers: Put burgers in the skillet and don't touch (4 mins)
- Burgers: Flip over, and if using cheese, put on top of burger now and cover skillet with lid (4 mins)
- Burgers: Take burgers out, put on a chopping board with some foil and cloth to rest (3 mins)
- Burgers: Toast the brioch buns in the burger skillet while the burgers juice (2 mins)
