Venison Stew

Ingredients (for 4ppl):

Main Ingredients:

  • 1kg venison
  • 2 rashers of bacon
  • 150g mushrooms
  • 1 large onion
  • 2 medium carrots
  • 1 large celery sticks
  • 2 cloves of garlic
  • 50g cornflower
  • 10g of butter
  • 1 tbsp fresh rosemary
  • 180ml of red wine
  • 400ml water + 4 tsp of beef gravy granules
  • 750ml of chicken stock
  • 2tbsp of redcurrant jelly

Goes Well With:

  • Cardomon rice
  • Seasonal Vegetables

Utensils:

  • Dutch oven

Instructions

Prepare (8mins):

  1. Dice venison into 3cm chunks
  2. Slice onion, carrots, mushrooms, celery and bacon
  3. Make the beef granules broth
  4. Turn the oven to 180°

Cooking (60mins):

  1. Brown the venison in a little olive oil and set aside (5 mins)
  2. Fry the garlic (30 seconds)
  3. Add onion, bacon and mushrooms and cook (3 mins)
  4. Add the wine (1 min)
  5. Add carrots, celery, gravy, rosemary and butter and stir (3 mins)
  6. Return the venison to the pot, cover and put in the oven (45 mins)
